Development of freeze drying technology

FD freeze-drying technology originated in the 1920s. In the 1940s, Russian scientists carried out small-scale experiments on FD products in the laboratory and achieved success. During World War II, FD technology was used to dehydrate plasma, making it portable and easy to carry, and normal saline was injected when necessary. After World War II, FD technology was used in medicine, biology, aerospace and aviation

In the 1970s, with the acceleration of industrialization, Japan digested and absorbed the FD scientific and technological achievements of the United States, and conducted in-depth research on them, so that the application of FD technology and its equipment in the field of food processing has made further development. Since then, FD products and equipment have entered the era of industrial production, mainly used for medicine, beverages, food, and low-temperature dehydration and drying of agricultural and sideline products.

The birth of freeze-drying technology has fundamentally solved the problems of food preservation and nutrition during astronauts' space work, and has been applied in the aerospace field of Russia, the United States and China. In the early stage of the development of freeze-dried food, due to the high cost, the output was low and the price was high. It was only used in aerospace, ocean navigation, polar exploration, mountain operations, etc.

Since the 1990s, with the increase of domestic and foreign demand, the expansion of production scale, the update of production technology and the improvement of the internationalization of production equipment, the production cost of freeze-dried food has been declining, and the variety and quantity of freeze-dried products have increased rapidly.

After entering the 21st century, with the continuous enhancement of people's awareness of environmental protection and health, and the accelerating pace of life, people have a higher understanding and put forward more requirements for scientifically processed food, which will greatly promote the further development of food vacuum freeze-drying technology. The market demand for freeze-dried food is increasing year by year. The output of freeze-dried food was only 200000 tons in the early 1970s, but now it has reached tens of millions of tons.
